A global culinary favorite, most cinnamon is cut from the inner bark of Sri Lankan Cinnamomum verum or the Indonesian Cinnamomum burmannii trees. "True" cinnamon comes from a bushy evergreen in Sri Lanka and South India called Cinnamomum zeylanicum.
